Button, cremini, and portobello are market stages or color strains of A. bisporus, not three separate species. Agaricus production is a compost-and-casing system.

Liquid Culture

Low-Tech Purchased Spawn

A beginner-friendly route using commercially prepared clean spawn with pasteurized straw, logs, or outdoor beds when the species supports it.

Species-Specific Inoculation: Mix clean commercial grain spawn evenly through finished selective compost under strict sanitation.

Sterile Workflow / Flow Hood: Spawn culture is produced aseptically; compost and casing rely on validated pasteurization, conditioning, hygiene, and vector control rather than full sterility.

Low-Tech / Still-Air-Box Workflow: Use professionally prepared compost, casing, and spawn. Improvised raw-manure indoor systems are not an acceptable low-tech substitute.

Spawn, Grain & Fruiting Substrates

Spawn / Inoculum: Commercial grain spawn produced from a verified A. bisporus strain.

Fruiting Substrate: Phase-II-conditioned Agaricus compost with pasteurized, pH-adjusted peat-based casing.

Natural Host: Conditioned straw-manure compost or comparable selective compost, followed by a non-nutritive casing layer.

Colonization, Fruiting & Environment

Colonization: Spawn-run in conditioned compost near 23–27 C with high CO2 and no free ammonia; prevent compost overheating.

Fruiting: After casing and case-run, lower air and compost temperatures to approximately 15–19 C and increase fresh air to initiate pins.

Humidity / Fresh-Air Exchange: Maintain high humidity without condensation. CO2 is intentionally high during spawn run and then reduced during pinning and cropping.

Fruiting Triggers: Casing colonization, controlled cooling, moisture management, and a deliberate CO2 reduction with fresh-air introduction.

Outdoor, Log & Bed Cultivation

Possible in seasonal prepared beds but inconsistent and more exposed to insects, competitors, and weather than controlled production.

Harvest, Contamination & Culture Storage

Harvest Cues: Harvest at the intended market stage: closed button, brown cremini, or expanded portobello before quality loss and excessive spore release.

Contamination Risks: Trichoderma green mold, bacterial blotch, dry bubble, cobweb, competitor fungi, sciarid and phorid flies, mites, and poorly conditioned compost.

Culture / Spawn Storage: Store commercial spawn refrigerated within supplier limits and retain strain, lot, compost, casing, and crop-room records.

Pests, Diseases, Safety & Toxicology

Cultivated A. bisporus is culinary, but allergy and foodborne contamination remain possible. Wild Agaricus identification is not beginner-safe.
Use conditioned compost and food-safe sanitation controls. Do not substitute a wild Agaricus collection for verified commercial spawn.
